- Fundamentals of Flour Milling
The Fundamentals of Flour Milling in 422 pages!
The Fundamentals of Flour Milling is one of the most comprehensive resources available today about grain processing. Developed by IAOM and industry experts for the Milling Technician Certificate Program, the textbook serves as a foundation for understanding the milling process – from an overview of the raw materials, to an in-depth look at the equipment required to make flour.
Over the course of six chapters, the following topics are explored: varieties of wheat and an overview of flour milling; cleaning and tempering; mill flow and the equipment and related processes; sanitation; process management and troubleshooting; and quality assessment and additives.
Packed with information, charts and graphics, this 422-page book is a must-have for your control room and as a resource for employee professional development.

- Cereal Millers Handbook
The principal engineering data needed in the milling industry has been concentrated in one handy source, the revised edition of the Cereal Millers Handbook. The members of the Education Committee of the IAOM believe this revised edition is a much needed addition to the milling, cereal grain and seed processing literature. The revised edition of the Cereal Millers Handbook represents a major contribution by the Association toward the fulfillment
of its duty to serve.Reissued in 2015

IAOM’s Food Protection Committee developed an Integrated Pest Management Manual to serve as a resource for the grain milling community. The goal of integrated pest management (IPM) is to identify, prevent, and eliminate conditions that could promote or sustain a pest population with a food manufacturing, storage, or transportation operation. IPM relies on appropriate assessment, monitoring, and management of pest activities.
The IAOM IPM Manual is divided into the following four sections.
1. Management Commitment
2. Key Stored-product Pests
3. IPM Components
4. IPM Application for ProcessesNow available as a coil-bound manual!

This manual was created for the International Association of Operative Millers (IAOM) membership by the IAOM Food Protection Committee in response to the new sanitary transport regulations by the U.S. Food & Drug Administration (FDA). Its purpose is to provide a summary of best practices to achieve compliance with FDA regulations and the quality expectations of milling industry customers.
The manual was written by members of IAOM’s Food Protection Committee who are practical experts in food safety, quality and transportation, with additional input from independent bulk transportation companies. Although this manual focuses on the transport of milled grain products, which are non-ready to eat, this manual has applicability to other dry bulk food ingredients.
The IAOM Bulk Trailer Sanitary Transport Best Practice Manual is divided into nine sections.
- Introduction
- Vehicle and Transportation Equipment Design Requirements
- Bulk Trailer Maintenance/Repair
- Trailer Wash Station Requirements
- Trailer Wash Process
- Prior Load/Return to Service
- Trailer Inspection and Loading
- Product Handling and Delivery
- Rail-Truck Transfers
